Ingredients
- 1/2 each Melissa's Perfect Sweet Onion -- diced
- 1 each Red Bell Pepper -- diced
- 1 each Green Bell Pepper -- diced
- 1 each Fresh Serrano Chile -- minced
- 1 each Fresh Jalapeno -- minced
- 2 cloves Melissa's Peeled Garlic -- minced
- 1 each Fresh Roma Tomato -- diced
- 2 11 oz. packages Melissa's Steamed - Ready To Eat Blackeyed Peas -- rinsed
- or...
- 2 11 oz. tubs Melissa's Blackeyed Peas -- cooked; cooled; rinsed
- 1/4 cup Seasoned Rice Vinegar
- to taste Sea Salt and Freshly Ground Pepper
Directions
In a bowl, gently combine all of the ingredients. Refrigerate for 1 hour to incorporate flavors.
Note
This is a great "Good Luck" dish for the New Year. Try it with some chips for an appetizer.
