Starfuit (Carambola) Salad with Spicy Lime Dressing

Ingredients

  • 1 Organic Leaf Lettuce torn into pieces
  • Organic Avocado
  • 1 jar Marinated Artichoke Hearts (6 ounces)
  • Starfruit (Sweet Carambola) sliced and seeded
  • Spicy Lime Dressing (recipe follows)
  • ripe Black Olives seeded for garnish
  • Spicy Lime Dressing
  • 1 cup Lemon Juice (use Lime Juice)
  • 1/2 cup Honey
  • 1 small Onion
  • 1 clove Organic Garlic
  • 1 small Red Peppers
  • 4 sprigs Organic Parsley

Directions

Place lettuce leaves on each of four individual salad plates. Add the avocado, marinated artichoke heart pieces, and carambola. Sprinkle lightly with the dressing and garnish with the olives.

Spicy Lime Dressing

In a blender combine the lime juice, honey, onion, garlic, and red pepper. Process until all ingredients are pureed. Add sprigs of parsley and blend for just a second. Chill for 1 hour.
