Ingredients
- 2 Roma Tomatoes chopped
- 1 Jalapeno Chile minced
- 1 Organic Limes juice freshly squeezed
- 1 bunch Cilantro chopped
- 1/2 Red onion chopped
- 1 tablespoon Mango Chuntney
- 1 tablespoon Dijon Mustard
- 1 tablespoon Lime Juice
- 4 cups Boston Lettuce or Red Leaf Lettuce torn
- 6 ounces Shrimp (medium or large size) cooked peeled and deveined
- 1/2 cup Organic Avocado diced
- 1/2 cup Caribbean Red Papaya diced
- 1/3 cup Organic Bell Pepper (Red Bell Pepper) sliced in thin strips
- 2 tablespoons Cilantro chopped
Directions
Mix first five ingredients together and set aside. Combine in a small bowl chutney, mustard and lime juice; mix well. Add to tomato mixture for 'dressing'. In medium bowl, combine remaining ingredients. Add dressing and gently toss to coat.
