Shrimp Salad with Avocado and Caribbean Red Papaya

For an elegant presentation serve salad in a half of an avocado, pit removed.

Ingredients

  • 2 Roma Tomatoes chopped
  • Jalapeno Chile minced
  • Organic Limes juice freshly squeezed
  • 1 bunch Cilantro chopped
  • 1/2 Red onion chopped
  • 1 tablespoon Mango Chuntney
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Lime Juice
  • 4 cups Boston Lettuce or Red Leaf Lettuce torn
  • 6 ounces Shrimp (medium or large size) cooked peeled and deveined
  • 1/2 cup Organic Avocado diced
  • 1/2 cup Caribbean Red Papaya diced
  • 1/3 cup Organic Bell Pepper (Red Bell Pepper) sliced in thin strips
  • 2 tablespoons Cilantro chopped

Directions

Mix first five ingredients together and set aside. Combine in a small bowl chutney, mustard and lime juice; mix well. Add to tomato mixture for 'dressing'. In medium bowl, combine remaining ingredients. Add dressing and gently toss to coat.
