Ingredients
- 8 ounces Asparagus cut into 2 inch pieces
- 1 teaspoon Orange Zest
- 1 Organic Orange
- 2 Organic Tomatoes cut into eighths
- 1/2 head Organic Romaine Lettuce, washed, spun dry and chopped
- 4 ounces Good Life Food Organic Salad Dressings (use Ginger Soy Salad Dressing)
Directions
Cook asparagus in boiling, salted water 1 min.; refresh in ice water to stop cooking. Drain and set aside. After zesting orange, peel and cut into segments. In a bowl, mix asparagus, orange zest and segments, tomatoes and lettuce. Toss with Melissa’s Good Life Food Ginger Soy Dressing.
