Soyrizo Vegetarian Breakfast Sausage Bake

Ingredients

  • 2 tablespoons Butter or Margarine
  • 16 ounces shiitake mushrooms - finely chopped
  • 1 cup Bread Crumbs dry
  • 1 package Soyrizo or Vegetarian Breakfast Sausage (in your produce case)
  • 8 large Eggs or Egg Substitute (like Egg Beaters - 16 ounces)
  • 3 tablespoons Organic Parsley chopped
  • 1/4 teaspoon Red Peppers ground

Directions

Melt margarine in large nonstick skillet on medium-high heat. Add shiitake mushrooms. Cook and stir about 10 minutes.

Remove from heat; stir in bread crumbs. Press mixture onto bottom of baking dish, sprayed with non-stick cooking spray. Set aside.

Cook vegetarian sausage in nonstick skillet on medium heat about 2-3 minutes, breaking sausage into small pieces and stirring frequently until lightly browned.

Remove from heat; stir in parsley and red pepper. Spread sausage mixture over mushroom mixture. Pour egg over sausage mixture.

Bake 25 minutes or until mixture is set. Serve hot.
