Ingredients
- 1 teaspoon Olive Oil
- 1 Soyrizo diced
- 1 1/2 cups Baby Dutch Yellow® Potatoes (DYP's)
- 1 bunch Organic Green Onions diced
- 2 tablespoons Organic Cilantro chopped
- 3 Eggs beaten
- 1 cup Soy Shreds
- 6 Tortillas gordita style (6-inch)
- Salt and Pepper to taste
- Fire Roasted Salsa
Directions
Heat pan on medium-high, add oil and heat. Add soyrizo and sauté until lightly browned, about 5 min, stirring occasionally. Add DYP's, green onions and cilantro; sauté 5 more minutes, stirring occasionally.
Reduce heat to medium; add eggs and Soy Shreds. Add salt and pepper to taste. Stirring occasionally cook eggs until firm. Remove from pan; divide equally among tortillas; roll burrito style. Cut in half and serve.
