Ingredients
- 2 tablespoons Extra Virgin Olive Oil
- 2 medium Maui Onions or available Sweet Onion chopped (12 ounces)
- 1 Organic Bell Pepper (use Green Bell Pepper) chopped
- 1 rib Organic Celery chopped
- 1 clove Peeled Garlic minced
- 1 1/2 pounds Soy Taco
- 2 cans (14½ ounce) Whole Peeled Tomatoes
- 2 cans (15 ounce) Kidney Beans (or other cooked/steamed beans)
- 1 can (8 ounce) Tomato Sauce
- 2 tablespoons Chile Powder
- 1 1/2 teaspoons Ground Cumin
- 1 teaspoon Kosher Salt
- 1/4 teaspoon Ground Black Pepper
- Ground Cayenne Pepper to taste
Directions
Heat the olive oil in a large saucepan. Add the onions, bell peppers, celery and garlic. Cook until heated through and onions are translucent. Stir in remaining ingredients and bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, for 30 minutes to allow the flavors to blend. Serve hot.
Note:
Top your chili with your favorite shredded cheese.

- A warm hearty meal. The Six Bean Medley is the best. The bean are perfectly cooked and ready to go. Quick and satisfying, and easy to make too!

- The flavor of the soy taco is so good that we don't add too much other seasonings in our soup! I'll need to use the 6 beans more often. They weren't gooshy! This chili was mighty tasty and your soy cheese and some Greek yogurt really topped it off! No left overs for tomorrow, darn it!

- I love the texture of all the beans in the steamed 6 bean medley. They are just pefectly cooked. I added a little more chile powder to give it an extra kick!
