Ingredients
- 1 pound Orzo pasta
- 2 tablespoons Extra Virgin Olive Oil
- 2 tablespoon Unsalted Butter
- 2 cloves Peeled Garlic
- minced 1/2 pound Mushrooms washed and quartered
- 1/2 teaspoon Kosher Salt
- 1/4 teaspoon Ground Black Pepper
- 1 pound English Peas shelled
- 1 Key Lime juice
- 1 tablespoon Balsamic Vinegar
- 1/4 teaspoon Chile Flakes
Directions
Prepare orzo following the package directions.
In a sauté pan over high heat, add the olive oil and butter. When the butter is melted add the garlic, cook for 30 seconds and add the mushrooms. Season with salt and pepper. When the mushrooms are tender (about 5 minutes), add the peas and the lime juice. Cook until heated through, stirring frequently. Add the vinegar and the pepper flakes and stir to mix. Place the orzo in a bowl, add the English Pea mixture and carefully stir to combine. Serve hot. Makes about 8 servings.
Note:
Fresh English Peas are a perfect complement to dishes like this because of their flavor, crispness and color. To remove the peas from the pod, simply pull off the string, open the pod and push out the peas.

- We received a bunch of fresh english peas in our organic delivery box and had no idea what to do with them. So off to google search and this recipe popped up. This turned out soooo yummy ! I did leave out the chile flakes for so those of us that don't like spicy and put them on the side for others. I undercooked the orzo so it was actually still crunchy. By the time you add the rest of the stuff and let it sit for a couple of minutes it was perfect ! This will go on our regular rotation of items when we get those fresh peas !!
