Melissa's Gai Lan and Long Bean Stir-fry with Enoki Mushroom

Ingredients

  • 1 bunch Gai Lan washed and trimmed
  • 4 pieces Chinese Long Bean cut in 1 inch pieces and *blanched
  • 1 package Enoki Mushrooms (3.5 ounces)
  • 1/4 cup Organic Bell Pepper (Red) julienned
  • 2 tablespoons Shallots peeled and chopped
  • 1 clove Organic Garlic chopped
  • 1 1/2 teaspoon Vegetable Oil
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Hoisin Sauce

Directions

Place a wok or wide frying pan over high heat until hot. Add oil, swirling to coat sides. Add long beans, mushrooms, red bell peppers and shallots; stir-fry for 1 minute. Add Gai Lan; stir fry for 1 minute. Add soy sauce and Hoisin sauce, toss with vegetables, continue to stir-fry for 2 to 3 minutes or until vegetables are crisp tender. Serve immediately. Accompany with rice or noodles.

Note:

May be served as a Vegetarian Main Dish.

* Blanching tip - Bring pot of water to boil. Add 1 Tablespoon kosher salt for every gallon of water. Add vegetables and cook just until crisp tender. Immeditately drain vegetables and submerge in ice water. Drain from waterand pat dry once vegetables are no longer warm.
