Ingredients
- 1 whole Chicken about 3 - 4 pounds, rinsed and patted dry
- 4 tablespoons Organic Garlic *Roasted and Chopped
- 1 cup Basil chopped
- 2 tablespoons Olive Oil
Directions
Pre-heat oven to 400°F.
Blend the garlic and basil well. Carefully separate the skin of the chicken from meat. Spread the garlic - basil mixture under the skin, coating as much of the meat as possible. Brush the skin with olive oil. Place the chicken on a rack in a roasting pan for 45 minutes, or until the skin is crisp, and chicken is cooked. Remove from oven and cool. Cut and serve.
