Melissa's Fire Roasted Garlic-Basil Chicken

Ingredients

  • 1 whole Chicken about 3 - 4 pounds, rinsed and patted dry
  • 4 tablespoons Organic Garlic *Roasted and Chopped
  • 1 cup Basil chopped
  • 2 tablespoons Olive Oil

Directions

Pre-heat oven to 400°F.

Blend the garlic and basil well. Carefully separate the skin of the chicken from meat. Spread the garlic - basil mixture under the skin, coating as much of the meat as possible. Brush the skin with olive oil. Place the chicken on a rack in a roasting pan for 45 minutes, or until the skin is crisp, and chicken is cooked. Remove from oven and cool. Cut and serve.

Note:

Great with Baby Red Mashed Potatoes and Garlic Potatoes.
