Ingredients
- 1/2 bunch Yu Choy Sum choy sum - (may be substituted with Yu Choy Sum) washed and trimmed
- 1/4 cup Dried Shiitake Mushrooms reconstituted, sliced and patted dry
- 1/4 cup Organic Bell Pepper (Red) julienned
- 2 tablespoons Shallots peeled and chopped
- 2 Thai Chile cut in half seeds and membrane removed
- 1 clove Organic Garlic peeled and chopped
- 1/4 cup Waterchestnuts drained
- 1 1/2 tablespoons Vegetable Oil
- 1 tablespoon Soy Sauce
- Salt and Pepper to taste
Directions
Place a wok or wide frying pan over high heat until hot. Add oil, swirling to coat sides. Add mushrooms, red bell pepper and shallots; stir-fry for 1 minute. Add garlic, chiles and waterchestnuts; stir fry for 1 minute. Add Choy Sum; stir fry for 1 minute. Add soy sauce, toss with vegetables; continue to stir fry for 2 to 3 minutes or until vegetables are crisp tender. Serve immediately. Accompany with rice or noodles.
Note:
May be served as a Vegetarian Main Dish.
