Ingredients
- 4 Mahi Mahi Fillets (6 ounces)
- Organic Grinders (use Rainbow Peppercorn)
- Organic Grinders use Garden Herb with Sea Salt
- 1/2 cup Unsalted Butter softened
- 1/2 cup Macadamia Nuts
- 1/4 cup Panko
- 2 tablespoons Olive Oil
Papaya-Pineapple Salsa
- 2 cups Pineapple diced
- 1 cup Papaya diced
- 1/4 cup Organic Mango diced
- 1 Green Chile minced
- 2 tablespoons Mint chopped
Directions
Season each fillet with salt and pepper. Finely grind macadamia nuts in a food processor. Transfer to a sauté pan and toast until lightly colored. Watch carefully as ground nuts toast quickly. Mix with soft butter, panko and salt and pepper. Press the nut mixture into the fillet of the fish. Heat sauté pan and add olive oil. When hot, quickly sauté the fish on both sides. Serve with papaya-pineapple salsa.
Papaya-Pineapple Salsa
In a bowl combine all ingredients with salt to taste and allow flavors to marinate at room temperature 1 hour. Serve relish at room temperature.

Panko is Japanese Bread Crumbs and they can be found on the Asian aisle in the supermarket.
