Lightly Seasoned Oca Skewers

Ingredients

  • 6 whole Melissa’s Oca potatoes scrubbed and halved
  • 3 medium Tomato cubed
  • 12 whole Melissa’s Pearl Onions peeled
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Dried Thyme
  • Salt to taste
  • Pepper to taste

Directions

In a pot, bring 3 cups of water to boil. Add oca and cook 15 minutes. Arrange cooked oca, tomatoes and onions alternately on skewers. Preheat broiler or grill. In a small bowl, combine olive oil, thyme, salt and pepper. Brush on vegetables. Broil or grill kebabs for 12 minutes, turning occasionally or until edges are golden brown.
