Grilled Soy Cheese Sandwiches

Lay a lightly oiled griddle on the stove over medium heat. Brush the bread slices lightly with olive oil on both sides of each slice. Lay 3 slices of soy cheese topped with 2 tomato slices on 2 slices of bread. Top with remaining 2 slices of bread and lay sandwiches on hot griddle, pressing on them gently to ‘seal’ them closed. Using a spatula, press gently on the sandwiches as they brown. Cook until browned on one side, about 3 minutes, turn and cook until browned on the other side, about 3 minutes. Remove from griddle and allow to cool before wrapping for a brown bag lunch. If serving at table, simply slice the hot sandwiches in half and serve immediately.

Note:

To speed up the melting of the cheese, simply place a skillet cover over the sandwiches on the grill. But keep a careful eye that they do not burn.
