Fish and Veggie Kabobs

Ingredients

  • 8 disposable bamboo skewers
  • Organic Zucchini
  • 8 Button Mushrooms
  • Pearl Onions or 1 Red Onion
  • 8 ounces Fish Fillets (Halibut Fillet) cut into 1 inch cubes
  • 1 tablespoon Olive Oil
  • Salt and Pepper to taste

Directions

Submerge skewers in water so they are saturated.  This will prevent the skewers from burning or catching fire on the grill.  Prepare and preheat outdoor grill or indoor grill pan.  Lightly oil grates to prevent sticking. 
To keep ingredients from twirling on skewer, use two skewers at a time spaced apart.  Thread the fish onto skewers alternating with the mushrooms, zucchini and onion.
Grill directly over high heat turning four times until fish and veggies are cooked through, about 12 minutes.
 
This is an easy to prepare, and nutritious!  Add some roasted Baby Dutch Yellow Potatoes to round out the meal.
