Ingredients
- 1 pound Melissa's Dutch Yellow® Potatoes--halved
- 2 Tablespoons Extra Virgin Olive Oil
- to taste Kosher Salt and Freshly Ground Pepper
- 1/2 Melissa's Organic Green Cabbage -- cut into 2-inch cubes
- as needed Thousand Island Dressing
- 8 slices Swiss Cheese -- cut into small triangles
- 8 slices Cooked Corned Beef -- cut into small triangles
- 1 small jar Sauerkraut
- as needed Toothpicks
Directions
Preheat oven to 425ºF.
In a bowl, combine the potatoes, olive oil and salt and pepper. Make sure the potatoes are well coated and place them in a single layer on a baking sheet. Roast them in the oven until fork tender, about 10-15 minutes. Remove from the oven and let cool.
To assemble
Place the cabbage on a platter. Dress them with the Thousand Island and build the bites in the following order...
Place the cheese on the cabbage.
Place 3 beef triangles on the cheese.
Add a little sauerkraut on the beef.
Top with a potato half and secure with a toothpick.
Serve and enjoy.
Note
This is like a good old Irish dinner wrapped into one bite.
