Ingredients
- 3/4 pound Black Beans -- cooked; half mashed - half whole
- 2 Chipotle Chiles in Adobo -- minced
- 1 1/2 cups Mayonnaise
- to taste Chipotle Adobo Sauce only (from the can)
- 12 large Tortillas
- 4 packages Melissa's Soy Shreds (use 2 Mozzarella flavor and 2 Cheddar flavor)
Directions
Heat your grill or grill pan. In a bowl, mix the beans and chipotle chiles together. In another bowl, mix the mayonnaise and chipotle sauce together. Spread the mayo mixture over one half of a tortilla. Top with the cheese and the beans. Fold over the tortilla. Carefully transfer to grill and cook until crisp and the cheese is melted. Serve immediately.
Note:
Serve these quesadillas immediately to retain their crispiness.

- Excellent Flavor! A little greasy, so I would guess to cut back a little on the Mayo/Chipotle sauce.

- These were great! I used vegan mayo, though. Also didn't have any black beans around, but I did have one of your kidney bean packs in my pantry, so I used them instead and served with salad YUM!!!! Thanks again for another great meal!
