Chipotle Black Bean Grilled Quesadilla II

Ingredients

  • 11 oz. Black Beans
  • Dried Chipotle Chiles
  • 1 bottle Good Life Food Organic Marinades use Chipotle Marinade
  • 12 large Tortillas
  • 1 bottle of your favorite Chipotle flavor Wrap Dressing
  • 4 packages Soy Shreds (use 2 Mozzarella flavor and 2 Cheddar flavor)

Directions

 Prepare the black beans according to package instructions, adding the chipotle chiles to the water. If using canned beans, rehydrate chiles (see cooking tip below) and add chiles and their water to a sauce pot along with beans.  Reheat on a low simmer, allowing chiles to infuse beans, about 20 minutes.  Drain and discard chiles.  Once cooked, spread the beans on a sheet pan, in a single layer, mix in the chipotle marinade and let cool.

Heat your grill or grill pan. Spread the wrap dressing over one half of a tortilla. Top the dressing with the cheese and add the beans. Fold over the tortilla.  Carefully transfer to grill and cook until crisp and the cheese is melted. Serve immediately.

Note:

Serve these quesadillas right after you cook them to retain the crispiness. The longer they sit the more crispness they lose.
