Ingredients
- 1 Cedar Plank
- 4 Salmon Fillets (about 8 ounces)
- 1 White Onion
- 4 tablespoons Basil chopped fine
- 2 tablespoons Mint
- 2 tablespoons Dill
- 1 Organic Oranges peeled and sectioned
- 2 tablespoons Extra Virgin Olive Oil
Directions
Preheat the oven to 375 degrees. Follow the cedar plank package instructions on soaking the plank. Most suggest soaking for at least a couple hours.
Place the raw onion and orange segments on the plank, first the onion, then the segments on top. Rest the salmon fillets on top of the onion and orange.
Lightly drizzle each fillet with olive oil. Top each fillet with half the herbs, reserve remaining herbs for final garnish.
Squeeze the lemon over the top of the salmon.
Place the plank in the oven and roast for 8 minutes. Pull plank from the oven and turn the salmon over. Roast for an additional 8 minutes or until an internal temperature of 120-130 degrees has been achieved; the salmon will begin to flake. Remove cedar plank from oven. Garnish with fresh herbs, and serve.
