Ingredients
- 1 tablespoon Gelatin unflavored
- 1 cup Sugar
- 1/4 teaspoon Salt
- 4 Eggs separated
- 1/2 cup Key Lime juice
- 1/4 cup Water
- 1 teaspoon Key Lime Peel grated
- Food Coloring (Green)
- 1 cup Whipped Cream
- 1 Pie Shells 9 inch baked
Directions
Mix gelatin, 1/2 cup sugar, and salt in saucepan. Beat egg yolks, lime juice, and water together; stir into gelatin mixture. Cook over medium heat, stirring constantly, until mixture comes to boil. Remove from heat; stir in grated peel. Add enough coloring for pale-green color. Chill, stirring occasionally, until thickened. Beat egg whites until soft peaks form. Add remaining sugar gradually; beat until stiff peaks form. Fold gelatin mixture into egg whites; fold in whipped cream. Spoon into pastry shell; chill until firm. Spread with additional whipped cream; sprinkle additional grated lime peel around edge of pie.
