Ingredients
- 1 3 ounce package Dried Cranberries
- 1 3 ounce package Dried Blueberries
- 1 3 ounce package Dried Tart Cherries
- 1 3 ounce package Dried Pineapple Rings diced
- 1 2 ounce package Dried Strawberries diced
- 1 tablespoon All-Purpose Flour
- 1 package Cake Mix (use Yellow Cake Mix)
- 1 package Instant Vanilla Pudding Mix
- 4 Eggs
- 1/2 cup Whole Milk (cold)
- 1/2 cup Rum
Directions
Preheat the oven to 350ºF.Butter and lightly flour a 10-inch loaf pan. Toss the dried fruit with the flour to coat. Mix together the cake mix and the rest of the ingredients until creamy. Fold in the dried fruit and pour into the prepared loaf pan. Bake in the oven for 1 hour to 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean. Cool for 5 minutes then remove from the pan and cool completely on a wire rack.
Note:
This is a delicious and moist fruit cake.

- I first made this delicious cake for my husband's Holiday Party! What a fabulous hit! Everyone now thinks that I am secretly a pastry chef! Since that night, I have made it 3 more times, each time it comes out perfect and people rave about how moist, and delicious it is! I was even able to to get my Uncle (who has had a 40 year boycott of anything fruitcake), to try it and even ask for seconds! This is now going to be my "signature" holiday dessert!
