Ingredients

  • 1½ pounds Cape Gooseberries, capes removed and rinsed
  • ½ cup Granulated Sugar
  • ½ cup Water
  • 1 1 ounce package Premium Liquid Fruit Pectin

Directions

In a saucepot, combine the sugar and the water. While stirring until the sugar dissolves, bring the sugar water to a boil and then remove it from the heat and let it cool. This is the simple syrup.

In a saucepan; combine gooseberries and simple syrup and simmer for 20 minutes. Next, mash the gooseberries and simmer for an additional 10 minutes. Add the pectin and simmer for another 15 minutes. Remove from the heat and let it cool. Makes 8 ounces of tart filling.

Note
