Peel and cut bananas in half lengthwise, then across to make four equal slices. Place quartered bananas on a baking sheet. Sprinkle approximately one tablespoon of sugar across the top of each banana; carefully pat brown sugar to flatten. With torch set on high, carefully brulee bananas until all sugar is melted and crisp. If using a broiler oven, broil until sugar is bubbly and melted. Transfer two slices to each plate and serve immediately. Garnish with vanilla bean ice cream or cinnamon whipped cream.

    These bananas are incredibly sweet and so delicious...they are perfect for this recipe (although if you don't have as big a sweet tooth as me, you can cut down a little on the brown sugar and add a small pat of butter to make a nice sauce)
