Ingredients
- 2 cups Cake Flour
- 2 tablespoons Cocoa Powder low fat and unsweetened
- 1 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 3/4 cup Banana very ripe and mashed
- 3/4 cup Baking Blend
- 2/3 cup Sugar unrefined
- 1/4 cup Maple Syrup
- 3 tablespoons Canola Oil
- 1 teaspoon Apple Cider Vinegar
- 2 teaspoons Vanilla Extract
- 1/2 cup Chocolate Chips

Preparation
Position a rack in the center of the oven and preheat to 350°F. Coat a 8 inch by 12 inch baking pan with cooking spray. Dust the pan evenly with flour and tap out excess flour.
In a medium sized bowl, sift flour, cocoa powder, baking soda, and salt. In another bowl, whisk mashed banana, baking blend, sugar, maple syrup, canola oil, vinegar, and vanilla. Make a well in the center of the dry ingredients and add the banana mixture. Mix with a spatula lightly just until the dry ingredients are moistened.
Pour the batter into the prepared pan and smooth the top. Sprinkle with chocolate chips. Bake for about 25 minutes, or until a cake tester comes out clean.
