Place the agave in a mixing bowl. Squeeze the juice from the Key Limes into the bowl and whisk until well combined. Add a little pepper, if desired. Makes enough salad dressing for 6-8 servings of salad.

Note:

This is a great alternative for dressings that contain seasoned rice vinegar. Also, if you don't have a juicer, one way to make the Key Limes easier to juice is to pop them in the microwave for a few seconds. But, be careful. They will be hot.
