Ingredients
- 2 ears Corn on the Cob husks and silks removed
- 3 ripe Organic Avocado peeled and seeded
- 4 Organic Roma Tomatoes diced
- 1 Jalapeno Chile minced
- 1 Shallots minced
- 2 cloves Peeled Garlic minced
- 3 Key Limes juiced
- 1/2 jar Salsa Casera
- 1/4 cup Cilantro chopped
- Pepper to taste
Directions
Heat the grill until hot.
Grill the corn until golden brown. When able to handle it, cut the kernels from the cob. In a bowl, mash the avocados and mix in the tomatoes and the next 5 ingredients. Mix in the cilantro and season with salt and pepper. Serve with chips.
Note:
For a colorful presentation, serve with different colored tortilla chips.

- This seemed like an odd recipe, but tasty BBQ ingredients, so I tried it for a family gathering. EVERYONE LOVED IT!!! I like my guaca chunky, so I didn't smoosh all of the avo and folded in the avo chunks last. Also, my kids think cilantro tastes like soap, so I subbed with parsley. Looked and tasted fantastic! Oh, I forgot to put on gloves when I cut the jalapeno and got it on my skin. Thanks for the burn tip; it really helped!!!!
