Ingredients
- 1 cup Soybeans (Edamame)
- 1/2 cup Unflavored Soymilk
- 2 tablespoons Cilantro without stems chopped
- 2 cloves Organic Garlic minced
- 1 teaspoon Chipotle Chiles chopped (optional)
- 1 large Organic Avocado ripe
- 2 teaspoons Organic Limes juice freshly squeezed
- Salt and Fresh Ground Black Pepper to taste
- 1 tablespoon Cilantro chopped for garnish
Directions
Cook edamame in salted boiling water for 5 minutes. Drain and cool to room temperature.
Combine edamame, soymilk, cilantro, garlic, and chipotle chiles in the bowl of a food processor. Process until mixture is very smooth, about 3 minutes. Set aside.
Peel and pit avocado and place in a medium mixing bowl. Add lime juice and mash with a fork, leaving small chunks. Add edamame mixture and stir to combine. Season with salt and pepper. Garnish with cilantro.
