Anaheim Chile Chutney

This recipe is very easy to make, goes well with eggs, pork, chicken, and seafood. Can be served hot or cold and is a great condiment to just have around. Store in refrigerator.

Ingredients

  • 2 pounds Anaheim Chile diced
  • 2 cups Sugar
  • 1 tablespoon Oregano chopped
  • 2/3 cup Cider vinegar
  • 1 teaspoon Salt

Directions

Roast, peel, seed, and chop chiles. (See tips on Roasting Chiles.) Mix the ingredients together and cook for 10 - 15 minutes, over medium heat. Allow to cool. Serve. For hotter chutney add 6 diced roasted jalapenos.
