Ingredients
- 8 ounces Soy Slices (Swiss flavored) shredded
- 1/4 cup Fire Roasted Sweet Red Bell Peppers drained and patted dry
- 2 tablespoons Parmesan Cheese grated
- 1 teaspoon Minced Garlic
- 1/4 teaspoon Fresh Ground Black Pepper
- 1 pound Cremini Mushrooms medium sized
- 1/4 cup Pine Nuts chopped
Directions
Preheat oven to 400°F. Arrange the mushroom caps in a single layer in a lightly oiled baking dish.
In the bowl of a food processor fitted with a metal wing blade, place soy cheese, roasted red peppers, parmesan cheese, garlic and pepper. Process until smooth, about 1 minute.
In a pastry bag fitted with a large star tip, place cream cheese mixture. Pipe into mushroom caps mounding slightly. Sprinkle the tops of the mushrooms with the pine nuts. Bake in the middle of the oven for 12 to 15 minutes, or until heated through.
