Roasted Garlic-Goat Cheese and Muscato Grape Crostini

Ingredients

  • 1 French Bread Baguette
  • Extra Virgin Olive Oil
  • 12 cloves Peeled Garlic
  • 12 ounces Soft Goat Cheese
  • 1 package Muscato Grapes sliced in half

Directions

Preheat oven to 350°F. Slice the baguette on the bias about 1/3-inch thick and place on a sheet pan. Brush each slice of bread with the olive oil and season with sea salt. Bake in the oven until toasted and browned. Place the crostini on a rack to cool.

To roast the garlic, toss the cloves with olive oil and season with salt and pepper. Place the cloves on a baking sheet and cook in a 425ºF oven. When the garlic is done, it should be golden brown and tender. When cool enough to handle, mince the garlic and mix it into the goat cheese.

To assemble, spread the garlic-goat cheese on a crostini and top with a grape half. Repeat this sequence for the remaining bread.

Note:

I use both the red and the green Muscato Grapes for contrast.
