Steven Petusevsky has achieved national recognition by pioneering an original, creative and healthful style of cuisine, a culinary marriage of traditional "health food" ingredients, with a creative, modern, multi-ethnic style.

Petusevsky began his career at the prestigious Culinary Institute of America. Graduating in 1977 he was awarded a teaching fellowship and his interest in education con-tinued at the Boston University Culinary Arts Division as a Chef Instructor. He continued his career becoming Corporate Executive Chef for a national chain of gourmet markets and as Executive Chef for a food consulting and restaurant design group. Petusevsky has also held positions at a luxury resort and at hotels both domestic and international.

As Petusevsky traveled and gained culinary exposure and experience with new ingredients, his philosophy remained constant: Enhance the natural color and texture of the freshest raw materials. Cook creatively using sensible combinations that nurture well-being. This unique cooking style and philosophy has brought him national recognition as a chef and journalist. Petusevky has been a contributing chef-author for the Time-Life Series "Great Meals in Minutes", and a contributing writer for Fine Cooking, Preventions Quick and Healthy Cooking, Parenting, and The L.A. Times Syndicate.

In addition, Petusevsky has become an industry spokesperson and a nationally recognized speaker and educator. He has done recipe development for major corporations and menu formulations for retail food service operations as well as full service restaurants. His unique blend of ingredients formed a successful menu appealing to approximately 10,000 diners each week at Unicorn Village Restaurant in North Miami Beach, where he was also responsible for a vast array of prepared food sold in the 11,000 square food Unicorn Village Market. Petusevsky's next stop as Executive Chef for the Bread of Life Natural Foods chain led him to his current role as Director of Creative Food Development for Whole Foods Markets.

Petusevsky's work has been instrumental in changing the image of vegetarian and health foods from dull to gourmet. "When I first entered this field, there was something stuffy, off-setting about healthy eating." As thousands of diners and millions of readers will confirm, Petusevsky has accomplished a great deal in proving that healthy food can be creative, beautiful and delicious.
