Patricia Greenberg was one step ahead of nearly everyone when her first book, The Whole Soy Cookbook, was published in 1998. It was about one year later, in October 1999, when the FDA proclaimed that 25 or more grams of soy protein per day, added to a diet low in fat and cholesterol, may help ward off certain cancers, protect against heart disease and ease the symptoms of menopause. Her background as a nutritionist had convinced her that a broad based, primarily vegetarian diet, would be beneficial in preventing diseases. Her challenge was to develop simple and delicious recipes for people who want to incorporate soy into their diets, that would also please existing soy enthusiasts.

With a B.S. in Food Science and Nutrition from Queen's College in New York, and professional training in classical cuisine from the Scottsdale Culinary Institute, Patricia Greenberg started experimenting with her favorite recipes, replacing items such as meat and dairy with their soy counterparts. The result was The Whole Soy Cookbook, a collection of recipes inspired by old favorites and classic dishes from the world's best cuisines.

Patricia Greenberg's primary area of expertise is healthful, fitness oriented cooking, with an emphasis on environmental awareness. She is currently an instructor in culinary arts & nutrition at the Southern California School of Culinary Arts and the Los Angeles Learning Annex. As an experienced lecturer and cooking teacher, and as a consultant for a number of soy food manufacturers, Patricia Greenberg has drawn from her educational background and her passion for food & cooking to get out the good word about soy and soy products.

Featured on television programs, such as The Today Show and the Food Network's Cooking Live, and on numerous radio shows throughout the country, Patricia Greenberg is now the host of her own radio program called "Local Flavor" on KCSN-Los Angeles. Her speaking engagements have included the Natural Foods Expo, the Los Angeles Tofu Festival, and the American Institute of Food and Wine. She has written many articles on soy and nutrition for such publications as Delicious Magazine and Culinary Trends.
