Early Years

Chef, cookbook author, and cooking show host Kathleen Daelemans is living proof that you can maintain good health and even lose weight without depriving yourself of your favorite foods. Her personal journey and her own successful weight loss began when instead of becoming head chef at one restaurant at a 5-star resort on the island of Maui she became head chef at the resort's spa restaurant. Both professionally and personally challenged (weighing in at 200 lbs.), she developed a repertoire of recipes that were full of high flavor and visual impact, while remaining low in calories and light on fat, sugar, sodium, and cholesterol, managing to lose 70 pounds in the process.

Recognition

Her cuisine won raves from guests and food critics, including the New York Times, Food & Wine, and Bon Appetit magazines. Her ability to remove excess fat and calories from recipes without compromising flavor, while pleasing the most discriminating customers, also led Kathleen Daelemans to be named one of Esquire Magazine's Top Ten Rising Star Chefs. Her recipes have been featured in Wine Spectator, Elle, Shape, Self, and Harper's Bazaar, and ultimately led to her own cookbook and television series on the Food Network, "Cooking Thin with Chef Kathleen."

Kathleen Daelemans believes that there is nothing like fresh produce to create the foundation for healthy dining. Her philosophy includes challenging yourself to find ways to cut back on fat calories while increasing good calories from vegetables, grains, legumes, and fruits. She thinks if we make the focus healthy side dishes, and use high flavored herbs, spices, condiments, seasonal produce, and small amounts of extra virgin olive oil, these small and easy changes to our favorite recipes will be the key to a satisfying and balanced way of eating.
