In the heart of the rich Sonoma, California wine country, next door to the enchanting Vintners Inn, is John Ash & Co., one of the finest restaurants in both the Sonoma and Napa Valleys. Although founder John Ash, one of the pioneers in wine country cooking, no longer cooks at the restaurant (he continues as a consultant), the kitchen and cuisine are in the very capable hands of Executive Chef Jeffrey Madura.
Chef Madura got his start making pizzas at an Italian restaurant just east of San Francisco, an enjoyable experience that launched his culinary journey. Next he moved on to Mudd's in San Ramon, California, where access to the 2-acre organic garden surrounding the restaurant expanded his knowledge of food and established the importance of incorporating fresh produce into fine cooking. Also during this time, Chef Madura enrolled in California Culinary Academy, and ironically served an externship at John Ash & Co., under the guidance of John Ash himself. "I was afforded the opportunity to be mentored by an accomplished and innovative chef, while simultaneously being introduced to the incredible bounty of Sonoma County's farms and gardens."
Following consulting stints in Tokyo, Amsterdam, and London, Jeffrey Madura returned to John Ash & Co., as Executive Chef, where he continues to promote freshness and seasonality. "My love of the business is constantly renewed simply by the chance to create meals using the freshest, highest quality ingredients of the season..." His originality and culinary instincts fit in perfectly with the gracious architecture and lusciously landscaped vineyard setting.
