Many people familiar with traditional Jewish cooking might scoff at the idea of using "Low-Fat" and "Jewish or Kosher" in the same sentence. Thanks to Faye Levy, these words now go together deliciously and healthfully. By taking easy-to-find ingredients and combining them in nutritious ways to lower fat content, she brings readers gourmet contemporary versions of over 200 traditional recipes.

The first part of the book explains the kosher eating principles that are the framework for menu planning and choosing which foods can be eaten. Many of these principles are based on reverence for life and compassion for animals. Two major rules are 1) eating dairy foods and meat products in separate meals, and 2) avoiding non-kosher foods, particularly shellfish and pork. Today’s unending selection of fresh produce and herbs, as well as an increasingly broad range of kosher ingredients now available make it easy to prepare low-fat and delicious kosher dishes.

Faye Levy has taken inventory of this bounty and put together easy-to-make recipes for every day enjoyment as well as for all the major Jewish holidays (including Rosh Hashanah and before and after theYom Kippur fast). Appetizers and Salads, Dairy and Egg Dishes, Chicken and Turkey Dishes, Vegetables and Vegetarian Dishes, and Desserts help organize these easy (many recipes take less than 30 minutes) and exciting recipes. Full-color photographs beautifully illustrate several recipes, including Glazed Carrot Coins with Cranberries (described below).

Recognition

Faye Levy is a graduate of La Varenne Cooking School in Paris, and is a well-known food writer, journalist and cooking teacher. She is a nationally syndicated food columnist of the Los Angeles Times and the main culinary columnist of the Jerusalem Post. She has written for national food magazines such as Gourmet and Bon Appetit, and is the award-winning author of fifteen cookbooks, including Faye Levy’s International Vegetable Cookbook.

The Low-Fat Jewish Cookbook, published by Clarkson Potter/Publishers (New York) features 225 traditional and contemporary gourmet kosher recipes for holidays and every day.
