Shredding

shredding 1Perhaps the most common and one of easiest techniques in Chinese cooking, shredding consists of slicing the ingredient at a 45 degree angle to the knife blade and then cutting the slices into thin strips.

The Chinese chef's knife is the original food processor. The knife is used to slice, shred, mince, chop, crush, tenderize, and then it will even scoop up the food. You can even use the handle to grind spices.
