Blanching

Blanching is when food, particularly vegetables, is submerged in boiling water for a short time, removed, and immediately place in a bowl of ice cold water to stop further cooking

Blanching is often used to pre-cook dense vegetables for stir-frying, and to remove any metallic taste from canned vegetables. You can also use blanching to remove the skin from nuts.
