Uses:
Cactus Leaves or Nopales (noh-POH-lays) are leaves which stem from the large Mexican cactus nopal. Often found growing throughout Mexico where they have long been favored, Cactus Leaves are also gaining acceptance in the United States. Available year-round, Cactus Leaves are at their peak in the spring when their tender paddles impart a juicy, "string bean" flavor. Ranging in color from pale to dark green, Cactus Leaves are generally diced or cut into small pieces or strips (called Nopalitos). Simmered in water until tender, Cactus Leaves can be added to a variety of dishes including salads and eggs. Melissa’s thornless Cactus Leaves are packed fresh in a variety of sizes including water-packed strips.
Selection, Storage & Handling:
Melissa’s Cactus Leaves are hand-selected for excellent quality. Look for firm bright green paddles with no evidence of wrinkling. Any thorns that may have been overlooked can be quickly removed using a vegetable peeler. Refrigerated tightly wrapped in plastic for one week.
If thorns must be removed, simply shave them off quickly using a vegetable peeler. Shave edges and rinse. Dice or cut into small pieces or strips, simmer in water until tender or pan-fry until crisp-tender.
