Uses

Grown worldwide in hundreds of varieties, the potato is no less than one of the world’s most versatile vegetables! Several different variety potatoes are available now from Melissa’s and include the Thin-skinned types: Baby White Rose and Baby Red Potatoes (also called White and Red Creamers) and the Colored-fleshed types: Yellow Finnish and Yukon Gold. Yukon Gold Potatoes are medium-sized round potatoes with delicate yellow-colored skins. Their excellent creamy texture is a natural yellow (before butter) giving them a rich subtle "buttery" flavor. Yukon Gold Potatoes can be cooked in almost any way imaginable. To preserve the nutrients, leave on skins and simply scrub gently in water before using.

Selection, Storage & Handling

Yukon Gold Potatoes from Melissa’s are hand-selected for excellent quality. Look for firm, well shaped, fairly smooth potatoes. Avoid any green discoloration (which is caused by overexposure to light, also known as "light burn") and can be bitter. Avoid any potatoes that show signs of sprouting, wilting, wrinkling or decay. Store in a cool, well-ventilated area rather than refrigerate.
