Uses
These seeds impart a rich yellowish-orange color to stews and sauces. They are usually ground up and made into Achiote Paste, which is the key flavor in carne asada, fajitas and many more popular Mexican food recipes. Its flavor is earthy, with a pleasant touch of bitterness to it.
Selection, Storage & Handling
Buy whole seeds when they're a rusty red color; brown seeds are old and flavorless.
