Uses
Wax Beans are edible-pod beans (eaten with their shell or pod). The Wax Bean is a pale yellow or purple variety of the more familiar green bean. Available from Melissa’s in both colors, Yellow Wax Beans and Purple Wax Beans (the latter turning green once cooked) are actually "stringless" beans. Easily cooked by simply steaming or simmering, Melissa’s Wax Beans are a good source of fiber (about 3.1 grams per 3/4 cup) and offer fair amounts of vitamins A and C. One pound of fresh Wax Beans will yield about 3 cups uncooked or 2 1/2 cups cooked.
Selection, Storage & Handling
Wax Beans from Melissa’s are hand-selected for excellent quality. Choose fresh, flexible beans that are slender, bright in color and free of blemishes. Avoid beans with mature seeds and swollen pods. Store in the refrigerator, unwashed in a tightly covered container for up to 5 days.
