    Uses:

    This succulent, almost clover-like herb has richly aromatic dark green leaves with reddish-tinted, juicy stems. Delightfully crunchy and fresh tasting, the entire plant can be used, the stems being the most succulent. Raw stems have a mild, slightly sour and uniquely tangy flavor.

    Verdolagas is rich in vitamin A, vitamin C and magnesium, with a fair amount of potassium and calcium. One-half cup has about 10 calories. Another plus is the high content of alpha linolenic acid, a type of omega-3 fatty acid, that is present in Verdolagas. Research is finding these substances may help to lower blood pressure and cholesterol levels, as well as helping to prevent blood clots.

    Traditionally thought of as an appetite enhancer, raw Verdolagas is exquisite in fresh salads, paired with chopped onion, cherry tomatoes, olive oil and a good balsamic vinegar. Sauté in olive oil and garlic and pair with mashed baby Dutch Yellow™ Potatoes.  Excellent when used in soups and stews. Briefly steam and toss with butter and pasta and a pinch of crushed red pepper. Perk up an omelet with its tang. May be dried and pickled for later use.

    Selection, Storage & Handling:

    Melissa’s Verdolagas is hand selected for excellent quality. Choose fresh-looking greens with good color and a clean, fresh scent. Avoid any brown spots or wilted stalks or leaves. Use soon after purchasing. To keep fresh, refrigerate in a plastic bag filled with air and securely closed. Store in the vegetable crisper section of the refrigerator. If leaves do become wilted, an ice water bath can revive them. Place Melissa’s Verdolagas stem side down in a jar of water (similar to fresh flowers) and cover with a tightly closed plastic bag. Store away from ethylene-producing fruits and vegetables like tomatoes, bananas and peppers. Best used within a few days of purchase.

    Leaves should be thoroughly washed and dried before using.
