Uses
Spearmint is the mint used most often in cooking. It has a rounded, slightly smoother taste than peppermint, with a cooling aftertaste. Use it both as a summer herb flavor for fresh garden vegetables or to make the well-known mint jelly that traditionally accompanies roast lamb. Mint pairs well with lamb, duck, chicken, pork or veal.
