Uses

Salsify offers a delicate and subtle oyster like flavor. It also has a taste profile similar to artichoke or asparagus with a hint of coconut. At first glance it looks like a muddy, beat up carrot. The flesh is cream-colored beneath its dark skin. Salsify looks similar to gobo root (burdock) which can reach up to 12 inches long. It is advised to go gently when flavoring with salsify no matter which method of cooking is chosen. Steaming is preferred over boiling as it breaks easily. Once cooked, cut as desired.

Selection, Storage & Handling

Store wrapped in plastic up to 14 days in the refrigeration, don’t wash skin until ready to use. Do not get wet when storing. When peeled, this root darkens immediately. Place it in a bowl of water and lemon juice during preparation to prevent darkening. Wear rubber gloves to avoid discoloration of hands.
