Uses
They are the best roasting potato and are also delicious boiled for potato salad or baked and topped with sour cream. Selection & Storage
Ruby Crescent Fingerling Potatoes should be kept in refrigeration at temperatures from 45-55 degrees F. When stored in cooler temperatures, the sugar content of these potatoes has a tendency to change to starch.
Preparation
Ruby Crescents are a unique addition to your table. Prepare as you would any baby or specialty potato. They are thin skinned and should be cooked whole and unpeeled. Ruby Crescents are great in salads and are excellent baked, roasted, and steamed as well.
