Selection, Storage & Handling
Purple Potatoes from Melissa’s are hand-selected for excellent quality. Look for firm, well shaped, fairly smooth potatoes. Avoid any white discoloration and which causes it to taste bitter. Avoid any potatoes that show signs of sprouting, wilting, wrinkling or decay. Store in a cool, well-ventilated area rather than refrigerate.
