Uses
They are best sliced and pan-fried or split and roasted, brushed with olive oil. They have an excellent potato taste. Additionally Peanut Fingerlings are more likely to fall apart when overcooked than a moist or waxy variety like Russian Banana Fingerlings.
Selection & Storage
Peanut Fingerling Potatoes should be kept in refrigeration at temperatures from 45-55 degrees F. When stored in cooler temperatures, these potatoes’ sugar content has a tendency to change to starch.
