Uses:

Melissa’s Organic Beauregard Yams are oblong tubers with a tender and moist bright orange interior. With their light, subtle flavor and creamy texture, they actually have properties similar to potatoes. Organic Beauregard Yams are an excellent source of potassium and a good source of vitamin C and vitamin B6. Sweet Potatoes are high in vitamin A and rich in potassium and vitamin C. Both are naturally low in fat and sodium. Now they are even better because they are organically grown without the use of harmful pesticides, preservatives and fertilizers. Beauregard Yams cannot be consumed raw but can be cooked in almost any way imaginable. Skins should be left on Yams when boiling or baking. For a savory dish, remove skin and cut into cubes, then boil for 10-20 minutes and top with butter, herbs and spices. For sweet and creamy potatoes, prick in several spots and bake for 45-60 minutes, or until tender, and top with marshmallows.

Selection, Storage & Handling:

Organic Yams from Melissa’s are hand-selected for excellent quality. Look for firm, well-shaped and fairly smooth tubers. Avoid tubers that have wrinkles, holes, or any defects. Store in a cool, well-ventilated area rather than a refrigerated one. Organic produce should not be stacked with non-organic produce.
