Uses:
Long Hots are a staple ingredient of many Thai and Korean stir fry dishes. The glossy green pepper is 7-9 inches long, but less than an inch wide. They are very firm with odd twists, crinkles and turns leading to a tapered tip. They are used extensively in stir fry because the pepper maintains its firmness throughout the cooking process. This pepper is moderately high on the heat scale with a robust flavor that is not as sweet as a Thai chile but delivers the same kick.
Selection, Storage & Handling:
Choose bright green, glossy peppers that are firm and thick. Avoid peppers with soft spots. Refrigerate, unwashed in a plastic bag for up to 7 days.
