Uses:
Indian Eggplant is about the size of a tomato and almost perfectly round, with the same dark purple skin of the larger variety. It tends to be very sweet and tender with few seeds. It is very easy to use because the skin does not need to be peeled and, in fact, preserves texture, taste and shape. Use as you would a “common” eggplant; baked, fried, or even steamed.
Selection, Storage & Handling:
Choose eggplant that is firm with a glossy skin and no scarring, tops should be bright green. Refrigerate in a plastic bag for up to ten days.
